Seaweed Salad

Seaweed is the detoxifier of the ocean and a great detoxifier of the body!  Full of chlorophyll, seaweed supports cell regeneration, improves Liver function, and softens masses, such as tumors.

This is a lovely recipe for any season of the year. In the Fall, the apples, ginger and sesame seeds strengthen the Lungs while the seaweed, walnuts and soy sauce begin to fortify the Kidneys for winter. These steps equate to supporting your immune system and rebuilding your resources after a busy Spring and Summer.

Ingredients

1 cup dried arame and/or wakame seaweed (soak seaweed in water to cover for 5-30 minutes, as directed; rinse and drain)

1 apple, diced

1/3 cup chopped walnuts (preferably soaked)

1 cup shredded red cabbage

1 cup shredded carrot

1-2 tbsp chopped parsley

Dressing: (Want more flavor? Double the dressing amounts.)

2 tsp grated, fresh ginger

4 tbsp tamari or low-sodium soy sauce

2 tbsp toasted sesame oil

2 tbsp rice wine vinegar

1-2 tsp honey

sesame seeds for garnish

1-2 tbsp lemon juice


Method

1. In a large bowl, combine the seaweed with the next 5 ingredients.

2. Combine the dressing ingredients and stir well.  Pour the dressing over the salad and toss.

3. Allow the seaweed salad to marinate for at least one hour.  This will give the salad a nice, deep flavor.
